Business Description

Located at 1200 11th Street Historic Fairhaven, deliciously perched on the mezzanine of the 40-year-old Indie Bookstore, Village Books, sits Evolve Chocolate + Cafe.  

Evolve opened in September 2018 and serves a local fresh fare of tasty & bold flavored savories, in-house pastries, cookies, and pies sprinkled with their signature sipping chocolate, mochas, truffles, and chocolate cookies making guests feel at home with the sweet smells of pies baking, sounds of espresso shots being pulled, fresh chai spices steeping, braised lamb and fresh salmon being processed into savory menu items.

Menus are created by co-owner Chef Christy Fox, along with her wife Shannon’s creative content, musings, and seasonal local ingredients of the PNW.

To enhance your dining experience our baristas will help you with a selection of regional wines & beer, boozy hot chocolate, French 75 mimosas, Steven Smith Tea fogs, and Bellingham Coffee Roaster espresso drinks.

Evolve’s 56-seat cafe includes a community table for larger groups (up to 12), a dozen upcycled Douglas Fir tables from a 100-year-old Fairhaven house, and two green living walls for clean breathing. Our dining room is reserved for non-laptop users while the balcony and writers’ corner can be 100% utilized for laptop users.

Several times a year Evolve Chocolate + Cafe offers a five-course book dinner called “Life Between the Pages”. Chef Fox translates emotions or actions from a book and turns them into 5 courses of food, hitting all the senses. Authors are in attendance, accompanied by a moderator.
